The problemProblem

Two ways to thaw, two different costs

Most plants still thaw in tubs. Water goes in, fish at −20 °C go on top, and because they drop in fast they stick together. A stuck cluster thaws on the outside and stays frozen in the middle.

Plants answer this with people. A line of operators with paddles, keeping the fish moving for the whole shift, so the cluster never forms.

The alternative on the market is a screw conveyor in a tank, with the process water heated in an external heat exchanger. It removes the labour and introduces a different cost: scales and fish fragments settle inside the exchanger. Flow drops over time. Microbiology gets worse in a place nobody can see, reach or scrub.

On a raw material that starts at €11/kg and is often eaten raw or barely cooked, that second cost is not a detail.

Mikrobiologia pogarsza się w miejscu, którego nikt nie widzi, nie dosięga i nie wyszoruje.

Przy surowcu od 11 EUR/kg, jedzonym często na surowo albo po obróbce niskotemperaturowej, ten drugi koszt nie jest szczegółem.

The approachRozwiązanie

We heat the vessel, not the water in a separate device

The entire inner surface of the tank — walls and floor — is a heating jacket. The process water stays where the fish are. There is no external circuit to foul, no flow to degrade over a season, and no hidden surface to manage in a cleaning plan.

The floor is ground and polished, so solids do not adhere to it.

With a 2.5 m screw diameter the heating area is large enough that transfer is gentle. Water is held at 8 °C across the whole vessel rather than heated hard at one point and mixed.

Barbotage

Compressed air through nozzles in the floor keeps the water moving hard at the infeed. Pieces and blocks separate on their own — no operator standing there to pull them apart.

An LED indicator shows where each batch sits inside the screw. Each batch has a colour, and the colour travels with the flight. Full provenance without waiting for the screw to run empty.

Delivered to Mowi

The reference installation runs at Mowi, the world's largest salmon farmer.

We designed it together with the client, and deliberately with margin — we had the physics, not the practice. The calculation gave 13.5 m of thawing length, split across two vessels so the screw loading stayed sensible.

On commissioning we measured it. One 6.5 m vessel delivered the throughput we had designed 13.5 m for.

Rather than leave the second vessel idle, we built the feeders and pallet tippers around it. The plant ended up with two independent thawing lines at full capacity, for the cost of the accessories.

Where it fits

Fish are frozen at sea — glazed in blocks or as single pieces — so thawing is a compulsory step in almost every processing plant that is not on the quayside.

The system is in production on salmonids. It is designed for pelagic species and for any plant handling gutted whole fish or glazed blocks.
